Move Over, Alfredo!

Okay, you've made the switch from pasta to zucchini, but what about your sauce?  Are you bored with your go-to red, tomato-based sauce?  Do you dream of thick and creamy alfredo sauce, like you used to eat before you actually cared about macronutrients?  Okay, maybe that's just me.

DUDE!!!  I thought I was hallucinating when I saw that the recipe doesn't include butter or cream (which I love, but I know some people like to limit); instead the star of the show is CAULIFLOWER.

Somehow, Melissa of the "Cupcakes OMG" blog has created magic and I can't wait to try out this recipe!!!

A Sweet Treat For Thanksgiving

Are you shocked? I'm actually going to spotlight a dessert for Thanksgiving. That's right and I'm not the least bit ashamed. There's no refined sugar and good ole fiber rich fruit, nuts, and oats to satisfy you longer. Check it out...

Ingredients:
4 cups peeled, sliced apples
3 Tbsp. pure maple syrup, divided use
1 tsp. ground cinnamon, divided use
½ cup old-fashioned rolled oats
¼ cup finely chopped raw walnuts

Preparation:
1. Preheat oven to 375° F.
2. Combine apples, 2 Tbsp. maple syrup, and ½ tsp. cinnamon in a medium baking dish; mix well. Set aside.
3. Combine oats, walnuts, remaining 1 Tbsp. maple syrup, and remaining ½ tsp. cinnamon in a medium bowl; mix well.
4. Top apple mixture with oat mixture. Bake for 25 to 30 minutes or until apples are soft.

*Makes 4 servings
